These Chocolate Sugar Cookies are delicious and taste like brownies! You can use my easily Customizable Perfect Royal Icing to finish these off! Go ahead, make these now!

No Chill No Spread Chocolate Sugar Cookies

Ingredients
  • 224 grams all purpose flour (1 3/4 cups)
  • 32 grams cornstarch (1/4 cup)
  • 1/2 teaspoon salt
  • 40 grams natural unsweetened cocoa powder (1/2 cup)
  • 113 grams unsalted butter cool, not room temperature (1 stick)
  • 140 grams granulated sugar (2/3 cup)
  • 1 tablespoon vegetable oil
  • 1/2 tablespoon vanilla
  • 1 large egg cold

No Chill No Spread Chocolate Sugar Cookies
Instructions
  1. Preheat your oven to 375 degrees F. Line a pan with parchment paper.
  2. In a medium sized bowl whisk together the flour, cornstarch, salt, and cocoa powder. Set aside.
  3. Place your unsalted butter, sugar, oil, and vanilla in the bowl of a stand mixer with the paddle attachment. Mix on low until just incorporated.
  4. Add your egg to your butter mixture and turn your mixer on low again. There will still be small chunks of butter and that is okay. Scrape down the sides and bottom of your bowl.
  5. With your mixer on low, add your dry ingredients into your wet ingredients. Continue to mix on low until it comes together. This may take a minute or two.
  6. I roll my dough on a piece of parchment paper with 3/8" slats on either side to roll a perfectly even dough.
  7. Cut your shapes, place on prepared pans, and bake for 8-12 minutes.
  8. Let cool on pan for 5 minutes and then move to a cooling rack to cool completely.
  9. Enjoy!

Recipe Notes

You can add other flavorings to make a creative cookie! I will omit the vanilla and add 1-2 teaspoons of Amoretti Chipotle Pepper Extract to make "Sweet Heat" Chipotle Chocolate cookies! You can also add 1 teaspoon of ground cinnamon (or other spices) to this to make a unique flavor!

    What a great recipe, I baked mine for 9 mins non convection, and added a tspn of peppermint extract to this at the very end. Well that took a great chocolate cookie over the top. Once I iced it it actually made it even better. A great cookie to start with that only got better and better with each small addition. Thank you for sharing

      Hi Cecilia! I’ve developed my Foolproof No Chill No Spread Sugar Cookies ( <-- Clickable Link ) so that it can be flavored in whichever way you need it to 🙂 Just omit the vanilla and add whatever flavor you like. There are a ton of amazing extracts and flavors available through Amoretti (amoretti.com), Watkins, and LorAnn (both available at supermarkets and craft stores). 🙂

    Chocolate cookie perfection!
    This is the second year we have followed your recipe for chocolate sugar cookies. I love how richly chocolate these cookies taste. They smell amazing. They create precise cut-out shapes and do not spread when baking. We mixed the dough and wrapped it up air-tight in plastic and stored in the fridge for a few days before cutting the shapes. We let the dough sit on the counter for about an hour before rolling it out between two sheets of parchment paper to avoid adding any flour.

    We love your recipes and are so glad that you share them!

    Does it have to be unsalted butter, I only have salted butter

      Hi Tonya! I only use unsalted. Salted butter has more water content that can cause spread. Here’s a great post I did on the subject 🙂 –> Salted Butter vs Unsalted Butter

    Hi,
    Just finished make my first batch follow directions exactly. Came out Great. The cookie is not sweet will the frosting make up for that? A lot of people like a sweet sugar cookie. Thanks.

      Hi Eva! I’m happy to hear that! These aren’t suppose to be really sweet, but yes, being that the royal icing is 98% sugar it will sweeten them up. 🙂

    Do we have to use a stand mixer/hand mixer or can we make them using just a spoon?

      Hi Miles! You can make them with a spoon, but you’re not going to get the same results. You’re going to have to use a ton of elbow grease as well because the butter shouldn’t be room temp.

    The first thing that I noticed after I tasted this cookie was the flavor of the cocoa powder. The chocolate flavor was prominent without being bitter. The slight sweetness of this cookie disguised any bitter notes from the cocoa powder.

    However, I could taste the cornstarch. It was a subtle taste that lingered beneath the flavor of this chocolate sugar cookie.
    I have had this cookie with some caramel sauce and ganache, it was amazing.

      Hi Mike! I’m sorry that you could still taste the cornstarch. Did you weigh your ingredients? I’ve noticed lately that any problems have been solved by weighing instead of scooping. I know we all measure differently and a lot of the time with scooping, ingredients are over-measured. I have yet to try these with caramel sauce and ganache, but oh my that sounds absolutely amazing!! 🙂
