Simple Cinnamon Muffins

These Simple Cinnamon Muffins are just that- simple! They’re delicious and so quick to whip up. My kids have these at least once a week for breakfast. You can also try my Simply Delicious Pumpkin Muffins with a hot cup of coffee.

Ingredients
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 tablespoon ground cinnamon
  • 2 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 cup milk

  • 1 tablespoon ground cinnamon
  • 2 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 cup milk
Simple Cinnamon Muffins
Instructions
  1. Preheat your oven to 350 degrees F. Line a muffin pan with 18 liners.
  2. In a large bowl whisk together you eggs, sugar, salt, vegetable oil, and ground cinnamon.
  3. Add your flour and baking powder. NOTE- When measuring out your flour, fluff it up, get a big scoop, then level off the top by swiping a knife across. You never want to pack the flour into your measuring cup or your muffins will come out heavy and dense instead of light and fluffy.
  4. Whisk your flour around just a few times. We're not fully incorporating it in at this point.
  5. Add your milk.
  6. Whisk until just incorporated.
  7. I like to use an ice cream scoop when I'm filling cupcake liners, but you can also use a 1/4 cup measuring cup to fill your liners about 3/4 of the way full.
  8. Bake for 14-18 minutes until they spring back when lightly touched.
  9. Remove from the oven and let set in the pan for about 2 minutes.
  10. Remove from the pan and enjoy!
